7 Delicious Winter Crock Pot Soup Recipes

Written by PSECU | Jan 11, 2023 11:00:00 AM

It seems completely appropriate that January is National Soup AND National Crock Pot Month, considering both of those topics are associated with words like, “comforting”, “warm”, and “cozy”. In an effort to kill two birds with one stone, so to speak, we’ve whipped up seven soup recipes that can be made in the crock pot. Each one is definitely warm, totally comforting, and undoubtedly cozy to help stave off the chill of January weather.

1. Split Pea Soup

Split pea soup has an unfounded bad reputation. The truth is, it’s simple and delicious. It's also really affordable. The Magical Slow Cooker’s recipe is packed with healthy veggies, split peas, and salty ham for a creamy and thick soup that’s a great winter staple.

2. Creamy Veggie + Wild Rice Soup

Looking for a hearty vegan option for a slow cooker soup? Look no further than Cook Nourish Bliss’s Creamy Veggie + Wild Rice Soup. Boasting six vegetables on the ingredient list and utilizing almond milk, this soup is like “a hug in a bowl.”

3. The Best Crock Pot Turkey Chili

Is chili technically soup, you might ask? We don't think it matters what the answer is because this turkey chili from Joyful Healthy Eats is bursting with flavor (and claims to be the best). The heat from the spices is sure to melt away any frosty winter blues. It can easily be made vegetarian friendly by omitting the ground turkey or substituting with vegan grounds.

4. Thai Chicken Soup

The hallmark of Thai cooking is its flavors: salty, sour, sweet, spicy, creamy. And, the Slow Cooker Thai Chicken Soup from Foodie Crush hits all five of those notes. The sour comes from the lime squeeze at the end, sweet and creamy from the coconut milk, spicy from the red curry, and salty from the fish sauce. Omit the chicken and sub veggie stock to make this vegan. Either way, you’re sure to warm up quickly with a bowl of this soup.

5. The Best Butternut Squash Soup

We’ve got another self-proclaimed “best” recipe coming your way! This time it’s Butternut Squash Soup from Gimme Some Oven. The ingredients that take a regular squash soup and amp it up are cinnamon, sage, a Granny Smith apple, and some nutmeg. Already vegan, it could also be made with chicken stock and cream if that’s what you have on hand. Save time by buying already peeled and diced butternut squash in the produce section of your grocery store.

6. Easy Potato Soup

The magic of this potato soup from The Kitchn is that its ingredient list is so simple, yet the resulting dish is flavorful and luxurious. Bonus: potatoes are a super budget-friendly food, and the recipe makes enough for a crowd. But let’s be honest, a good bowl of potato soup is just a vehicle for the delicious toppings, right? Bacon, cheddar, and scallions finish off this winter staple comfort food.

7. Easy Lasagna Soup

They weren’t lying when they said this recipe was easy. The Kitchn’s Easy Lasagna Soup has a grand total of three steps. Lasagna is a notoriously tedious dish to make but this soup delivers on all the flavor you love about the Italian classic without the complicated recipe. Serve with a heap of parmesan and mozzarella on top, a nice crusty piece of garlic bread, and you’re set.
